Quick & Simple Quinoa Breakfast

Quinoa is a nutritious seed of a grain that is a complete protein (great for vegetarians/vegans), high in fiber, iron and magnesium. It also contains manganese, potassium and zinc.

This is good for you because protein helps maintain, repair and growth of muscle. Magnesium is critical for daily energy production. A good amount of daily fiber is necessary to help with processing and digesting food. Fiber is important during training, race and recovery days.

Quinoa is great for any meal of the day, it's very versatile so play around with different recipes. Here are a couple household favourites:

Plain Quinoa

1 Cup cooked quinoa

Salt and pepper to taste

A good quality olive oil

Raspberries & Coconut Quinoa

1 Cup cooked quinoa

Coconut milk

Handful of fresh raspberries

Blueberry Almond Quinoa

1 Cup cooked quinoa

Almond milk

Handful of fresh blueberries

Sprinkle with shredded coconut

Eggs & Quinoa

1 Cup cooked quinoa

1 or 2 scrambled eggs

Salt and pepper to taste

A good quality olive oil
